Easy Watermelon Lime Popsicles

These Watermelon Lime Popsicles are an easy dessert for summertime! They are sweetened with honey, so there is no refined sugar. I like this recipe because it is a great way to use up any extra watermelon that you might have. And you create a healthy dessert that will last for a long time in the freezer! Great for kids or adults for summer weather.

The main part of this recipe is the watermelon. Make sure you are using a fresh watermelon for the best taste. If the watermelon is extra sweet, you might consider only adding 2 tbsp of honey. Cut the watermelon into rough cubes for this recipe and try to remove as many seeds as possible. You can also remove any additional seeds after blending because they tend to float to the top.

Watermelon Lime Popsicles

For the lime juice I used store bought organic lime juice. However, if you wanted to use fresh squeezed lime juice that would be even better! The lime juice and the honey really complement the watermelon, and the dash of salt helps to give it a bit more flavor.

If you are unsure about how much a dash of salt is, it is typically around 1/16 of a teaspoon, but the measurement is a bit subjective. You can always taste test the mixture to see if it needs to be adjusted before freezing. Start with a little bit and go from there.

Easy Watermelon Popsicles with Lime

These popsicles are easy to make and are sweetened with honey! A simple dessert for summertime! This recipe makes about 6 large popsicles.

Equipment

  • Blender
  • Popsicle Molds

Ingredients
  

  • 4 cups watermelon (cubed)
  • 1 tbsp lime juice
  • 3 tbsp honey
  • 1 dash salt

Instructions
 

  • Cut up your watermelon into cubes and measure out 4 cups.
  • Add the watermelon, lime juice, honey and a dash of salt to your blender.
  • Mix until it is smooth. If there are any seeds on top of the mixture, try to remove them with a spoon.
  • Pour the mixture into the popsicle molds and place them in the freezer.
  • Freeze for about 6 hours, then they will be ready to eat!
  • If stored properly in an airtight container, the popsicles should last 4-6 months in the freezer.
