
Looking to make pumpkin spice waffles but don’t want the gluten, dairy or refined sugar? Then this recipe is for you! My original recipe was so good that I has to make a version that was GF, DF, and RSF! A healthier way to enjoy this fall breakfast idea!
Instead of cane sugar or brown sugar I have substituted coconut brown sugar. The recipe also calls for brown rice flour, tapioca flour, and potato starch instead of regular flour. If you would like, you can substitute an all purpose GF flour blend that you like. I have also used coconut cream or any dairy free milk depending on the altitude that you are at. Keep in mind that if you are using a nut milk it can make baked goods brown a bit more, but it will still taste ok.
The recipe for the pumpkin spice waffles calls for chopped pecans to be mixed into the batter. However, you can always sprinkle them on top, or omit them all together. Customize them to your preference! My kids love these waffles, but each one wants them prepared a different way of course!

High Altitude Pumpkin Spice Waffles - GF, DF, RSF

Ingredients
- 1 1/2 cup brown rice flour plus 2 tbsp
- 1/8 cup potato starch
- 1/8 cup tapioca flour
- 3/4 tsp salt
- 1 1/2 tsp baking powder
- 2 tsp pumpkin spice
- 3 large eggs
- 1/4 cup avocado oil
- 1/2 cup coconut brown sugar
- 15 oz can of pumpkin puree
- 1 can coconut cream (5.4 oz) or 2/3 cup
- 1 1/2 tsp vanilla
- 1/2 cup chopped pecans (optional)
Instructions
- Turn on your waffle maker.
- In a small mixing bowl combine the brown rice flour, tapioca flour, potato starch, salt, baking power and pumpkin spice.
- In a large bowl add the eggs and whisk. Then add the oil, coconut brown sugar, pumpkin puree, coconut cream and vanilla. Mix until combined.
- Add the flour mixture into the large mixing bowl and mix until combined.
- If you are adding pecans, mix them in until just incorporated.
- Pour the batter into your waffle maker and cook.
- Makes about 6 waffles.
