
I was searching for a holiday cookie that was easy, full of flavor, and different than anything else I was baking. I also had a large jar of molasses, so decided to try molasses cookies. I thought these would be interesting with the addition of orange flavor and bourbon, and I was not disappointed! They are also really easy to make, you make the dough, roll them and sugar, and then bake! No crazy process or decorating, which is nice to have during the busy holiday season! These would also be good any night for dessert, especially with your favorite bourbon or drink of choice!

High Altitude Orange Bourbon Molasses Cookies
These easy to make molasses cookies are made with bourbon and orange extract. They are full of flavor and are something different to wow whoever you are baking for! Recipe makes about 2 1/2 dozen cookies.
Equipment
- baking sheets
- parchment paper
- 1 1/2 tbsp cookie scoop
Ingredients
- 2 1/2 cups flour + 2tbsp
- 1 tsp salt
- 1 tsp baking soda
- 1 1/2 tsp cinnamon
- 1 1/2 tsp ginger
- 1/2 tsp all spice
- 3/4 cup butter
- 3/4 cup brown sugar minus 2 tsp
- 1/4 cup molasses
- 1 large egg
- 1 tsp vanilla
- 1/2 tsp orange extract (or flavor)
- 3 tbsp bourbon
- 1/3 cup granulated sugar (for rolling)
Instructions
- Preheat the oven to 350F and line baking sheets with parchment paper.
- In a small bowl mix together the flour, salt, baking soda and spices.
- In your mixing bowl combine the butter, brown sugar, and molasses. Mix until it is light and fluffy.
- Add the egg to the mixing bowl and mix until it is just combined. Add in the vanilla, orange extract and bourbon.
- Add in half of the flour mixture until just combined, then repeat. Mix by hand to make sure everything is incorporated.
- Use a 1 1/2tbsp cookie scoop to portion out the dough. Roll into a ball and then roll in the granulated sugar. Evenly space the dough on the parchment lined baking sheet.
- Bake for 12-15 minutes until the cookies are set.
- After you take the cookies out of the oven let them sit for 1-2 minutes, then transfer to a cooling rack to cool completely.
- Store the cookies in an airtight container. They will stay good for about 5 days at room temperature and up to 3 months in the freezer.
